Skinny Chicken Fajitas
What you need:
3 boneless skinless chicken breasts
1 can no fat refried beans
10 flour tortillas (2 per serving)
Shredded cheddar cheese
Light sour cream
What you do:
Cut chicken breast into small chunks or strips. Season with salt and pepper to taste. Place in nonstick pan and cook on medium to high heat until done. Remove from heat. Open can of refried beans, pour into cast iron skillet and cook on very low heat until bubbles come from the top. Cook tortillas in clean cast iron skillet on medium heat one at a time until patches of light brown appear on each side.
